The Story Behind the “Hana” Sake-Pairing Course

I’m Koya Shinozawa, chef and owner, now in my 24rd year as a sushi artisan.

My journey began in 2002 at conveyor-belt sushi; I honed my skills under experienced chefs—learning fish prep, ingredient handling—leading me to take over a conveyor-sushi franchise in Koshōji, Nagaoka, in 2007.

After 12 years at that location, I moved to the current station-front site in late 2018—now in our seventh year here.

With the basics instilled by my mentors, I went back to square one—dissecting and rebuilding my prep methods to understand “why each step matters.

today, many loyal customers return regularly.

Our Google rating is 4.6, and I’ve appeared on local TV programs.

Many guests visit after reading online reviews.

Despite being a small restaurant, I feel truly grateful for the support of so many guests.

We take the time to treat you to delicious sushi, perfect for making your special day truly memorable.

While developing our course menu, I visited other restaurants to study their offerings.

Yet, I always noticed the same thing:

“The food is excellent and the atmosphere is great, but something is missing.”

At many sushi restaurants, dishes are simply served with little to no communication with the guests.

Of course, there’s value in using fine ingredients and offering a luxurious setting—but how much more special it would be with a touch of the chef’s personality.

Without that heartfelt desire to delight the customer being conveyed, it all feels like a missed opportunity.

So I wanted to create an experience where guests can enjoy not just the food, but also the communication.

By explaining each dish and the fish we serve, or showing a live shrimp before preparing it—

I hope to bring a sense of performance and connection to the meal.

Through trial and error, we created a course that leaves lasting memories, full of thoughtful touches to delight every guest.

 

Thoughtful Details in Every Dish

Of course, we put careful thought into every single dish we serve.

One highlight: mid-course, a pan-seared Japanese red sea bream with skin adds a Western twist.

Although Western-inspired, it is finished with a Japanese touch—reduced Ushiojiru (soup stock) thickened with potato starch to create a delicate sauce.

Served as a palate-refreshing break amid the raw fish dishes, it provides a delightful moment of contrast and enjoyment.

Sake and sushi are a perfect match.

We carefully select sake to complement each dish and sushi piece.

Sake offers a range of flavours—umami, sweetness, bitterness, rich aroma, astringency, and acidity—and we take all of these into account to provide the optimal pairing.

Sake is deep and complex, and my own understanding of it has evolved dramatically through study.

I want to share this excitement with guests who may have preconceived notions or little experience with sake.

Our goal is for everyone to experience the harmony and delight of sake paired with sushi.

Q.How far in advance should I make a reservation?

A.Please make your reservation at least 3 days in advance. (Due to ingredient preparation, in some cases, depending on the day of the week, 2 days in advance may also be possible.)

A.Yes.

Q.Is there a cancellation fee?

A.Due to ingredient arrangements, any reservation changes or cancellations from the day before will incur a 100% cancellation fee.

Q.Can I make a reservation for six people?

A.Yes.

Normally, we only guide guests to the counter seats, but table seating is also possible.
Sushi is served in groups of three, and the chef may not be able to leave the counter to explain the sake or dishes in detail.As a result, you may not be able to fully enjoy the course experience.

We strongly recommend counter seating, but we can accommodate table seating if necessary, depending on your situation.

 

Q.What is the maximum number of guests per reservation?
